Also, I tried a tiny sip last night, there's a huge taste difference, just over the fist day of fermentation.

I think a good mead takes months to ferment though, it's a slow but powerful fermenter, I mean, it's not like whisky where once it's bottled it stops, it can keep on going after bottling I think.

Yeah, mead is actually known for making "bottle bombs" because the fermentation continues after bottling if you don't neutralize the yeast properly and if screw cap it instead of corking the bottles sometimes explode due to the internal pressure from the fermentation.
I'm gonna have to try that now.

Having had moonshine before I can honestly say that it is not delightful. It will get you trashed very quickly, but the taste is quite strong >.>'shine is where it's at.

I know what you're talking about only in the scientific sense, as I know the chemical structure of many different kinds of alcohol, but, being 13, I'm years too young.
I have no urge to drink alcohol, though. Even if I wanted to, I'm too much of a goody-goody to break the law like that.
