Oooh you guys are in for a treat, mead is the alcohol of the gods, my favourite by far. I would suggest that you source some local honey for the best taste, if you cheap out then it has a slight metallic taste where the honey is over processed. =)

Plus you help keep local beekeepers going and that's always a plus.

We just went with the cheap stuff this time, $5 for two pounds. If it turns out good though, we'll go for better honey for the next batch.

Also, I tried a tiny sip last night, there's a huge taste difference, just over the fist day of fermentation.

Yeah there's some big sort of, milestones, where the taste changes drastically.I

I think a good mead takes months to ferment though, it's a slow but powerful fermenter, I mean, it's not like whisky where once it's bottled it stops, it can keep on going after bottling I think.

Yeah, mead is actually known for making "bottle bombs" because the fermentation continues after bottling if you don't neutralize the yeast properly and if screw cap it instead of corking the bottles sometimes explode due to the internal pressure from the fermentation.

Neat, lemme know how it works out. I have had mead a few times before and it was amazing.

Having had moonshine before I can honestly say that it is not delightful. It will get you trashed very quickly, but the taste is quite strong >.>

I know what you're talking about only in the scientific sense, as I know the chemical structure of many different kinds of alcohol, but, being 13, I'm years too young.

I have no urge to drink alcohol, though. Even if I wanted to, I'm too much of a goody-goody to break the law like that.
